On hydrolysis surcrose gives one molecule of `prop -D` glucule of `beta -D-` fructose
`(##RES_ORG_CHM_V02_XII_C04_E01_215_A01##)` . The Two hexoses in sucrose are joined through a glycosidic linkage involving `C-1` of glucose and `C-2` of fructose Thus surose in non-reducing sugar .

Cyclic acetals are commonly used to protect vivinal cis hydroxyl groups of sugars while reactions are carried out on the other parts of the molecule.
