Why do HCl, `HNO_(3)`, etc., show acidic characters in aqueous solutions while solutions of compounds like alcohol and glucose do not show acidic character?

The acidic character of a substance is due to the presence of hydrogen ion [`H^(+)` (aq) ions ] in its aqueous solution (water solution) `HCl` and `HNO_(3)` show acidic properties because they produce hydrogen ions when dissolved in water. The solutions of compounds like alcohol and glucose do not show acidic character because they do not ionise (or dissociate) in water to produce hydrogen ions.
