Food preservatives are chemical substances are capable of inhibiting, retarding or arresting the process of fermentation, acidification or other decomposition of food by growth of micro organisms.
Examples :
(i) Acetic acid is used mainly as a preservative for preparation of pickles.
(ii) Sodium meta sulphite is used as preservative for preparation of pickles.
(iii) Sodium benzoate is used as preservative for juices.
