What is demulsification ?

Demulsification is a process which involves the breaking down of an emulsion to yield constituent liquids. It can be brought about by:
(i) boiling or freezing or centrifuging.
(ii) adding a substance that destroys the emulsifier.
(iii) adding a dehydrating agent in case of water in oil type emulsion.
Examples of demulsifiers. (i) Addition of an acid to an emulsion stabilised by sodium oleate.
(ii) Addition of an electrolyte to destroy the charge on the dispersed phase.
