Organic Acid Produced by Microbes
Several organic acids are produced by microorganisms. Some of them are as follows
(i) Citric acid (isolated in 1784 by Carl Wilhelm Sheele from lemon juice). Industrially, the fungus Aspergillus niger produces citric acid.
(ii) Gluconic acid It is produced industrially by Aspergillus niger. It is used in metal cleaning and therapy for calcium and iron deficiencies.
(iii) Acetic acid (vinegar) It is produced in two steps
Conversion of sugar into alcohol by yeast.
Conversion of alcohol to acetic acid by bacteria, Acetobactor sp.
(iv) Lactic acid It is the first organic acid produced by fermentation by Streptococcus factis, Lactobacillus sp. and Rhizopus.
