Types of Emulsions
(i) Oil Dispersed in Water Type This is an emulsion in which oil is mixed with water which acts as dispersion medium, e.g. milk, vanishing cream.
(ii) Water Dispersed in Oil Type This is an emulsion in which water acts as dispersed phase and oil as dispersion medium, e-g. butter and cream.
