The outer skin of dried fruits and vegetables acts as semi - permeable membrane. These membranes appear to be continuous sheet or fibers, yet they contain a network of semi - microscopic holes or pores. solvent molecules, like can pass through these holes but the passage of bigger molecules like solute is hindered. This process of flow of the solvent from dilute solution (or pure water ) to the concentrated solution (inside the dried fruits and vegetables ) is called osmosis. Thus swelling of dry fruits and vegetables to their original size when soaked in water in due to osmosis
the process will be accelerated with increase in temperature because osmosis becomes faster with increase in temperature .
