When outer shell of an egg is removed by dilute acid (say dil. HCI) ,t he contents of the egg are still held in place by a thin membrane . This membrane acts as a semi - permeable membrane. When the egg is placed in water , water molecules enters the egg through this membrane and it swells. It is due to osmosis As we know the contents of an egg are mostly proteins with very high molecular mass. Thus the molar concentration of the contents of an egg is quite low. This is despite its their nature due to very high concentration of solute in `gL^(-1)` . On the other hand a saturated solution of salt in water (brine) appear to be watery with a low concentrationin `g L^(-1)` yet, it has a very high osmotic pressure. It is due to lesser molar mass and i = 2 . When an egg, with outer hard shell removed, is placed in saturated brine solution water flows through semi - permeable membrane from inside the egg (with low concentrations of solute in mol `L^(-1)` ) to outer brine solution (with high concentration in mol `L^(-1)` and i = 2 ) due to osmosis. As water moves out of the egg due to osmosis the egg shrinks
