The soda commonly used in the kitchen for making tasty crispy pakoras is baking soda. Sometimes it is added for faster cooking. The chemical name of the compound is sodium hydrogencarbonate (`NaHCO_(3)`). It is produced using. sodium chloride as one of the raw materials.

Uses of Baking soda. [sodium hydrogen-carbonate (NaHCO3)]
(i) Sodium hydrogen carbonate is used as an ingredient in an antacid: Being alkaline, sodium hydrogen carbonate neutralises excess acid in the stomach, hence is used to remove acidity and provides relief.

(ii) It is used as an ingredient in baking powder : Baking powder is a mixture of baking soda (sodium hydrogen carbonate) and a mild edible acid such as tartaric acid. When baking powder is heated or mixed in water, the following reaction takes place.

Carbon dioxide formed during heating causes bread and cakes to rise and making them soft and spongy.
Sodium carbonate formed may causes bitterness in cake. Tartaric acid is used to remove bitterness by neutralizing the effect of sodium carbonate.
(iii) It is used in fire extinguisher.
It is also used in soda-acid fire extinguishers.
Soda-acid fire extinguisher contains a solution of sodium hydrogen carbonate and sulphuric acid. These can be made to come into contact with each other either by pressing knob. Carbon dioxide is liberated and it forces a stream of liquid on to the fire and cuts off the supply of air. Thus, it helps to put out the fire.
