Give the composition and action of backing powder.

Baking powder is a mixture of `30% NaHCO_(3), 40%` starch, `10%` calcium dihydrogen phoshate `[Ca(H_(2)PO_(4))_(2)]` and `20%` sodium aluminium sulphate `[NaAI(SO_(4))_(2)]`. On heating baking powder, `CO_(2)` is evolved.
