Why do fruit growers spray their trees with water, when frost is expected?

The cells of living organisms are basically composed of water. When water freezes, its volume imcreases. The increased volume of frozen water has disastrous effect on the tissue of plants and fruits as it can rupture cell walls leading to their deaths. When frost is expected, the fruit growers spray their trees with water so that the freezing of water may not take place on trees and fruits. By this way, trees and fruits are protected.
