Viscosity depends on the amount of hydrogen bonding between molecules and presence of more `-OH` groups, glycerol involved in intramolecular hydrogen bonding within the molecule, has 3OH groups per molecule whereas ethylene glycol has 2OH groups per molecule, thus glycerol is more viscous than ethylene glycol.
